What makes LA notable is not so much the quality of the food itself but the food culture surrounding it: men as well as women taking interest & pride in cooking, celebrating hole in the wall mom & pop joints, remembering old restaurants, etc...
People in Louisiana hold on to food because we don’t have anything else. It either disappeared or moved to Houston.
