I’ve had some in for almost a year before that I’ve smoked and were fine.
The fat shouldn’t spoil if you put it in the freezer immediately and then defrost it properly in the fridge when ready to use.
What you don’t want to do is have it sit in your fridge for 4 or 5 days and then freeze it. While most of the cryovac packs would be fine doing that, you just never know how long it was sitting out at the grocery.
Edit: Are you sure they spoiled? Cryovac meat has a little of an odd smell when you first open it up. There is nothing wrong with the meat and the smell goes away.

I use them for sausage so I debone, cube up, and vacc seal in 2-3lb packs
Either way, I suggest splitting the pack and wrapping them individually. Plastic wrap and freezer paper work great if you don’t have the ability to vacc seal the whole thing

I just ground one up that I froze in probably fall 2022 and then last year it started to thaw in a freezer incident but never thawed out at all. Freezer came back and all was good. But lost some shrimp. Anyway I used 2/3 to add to venison for deer sausage and wife used one steak I cut from it and the meat around the bone for a Mexican dish and it smelled and tasted fine. The deer/pork mix made some good sausage too. But we put in a good zip lock and gikd freezer paper. Too big to vacuum pack.
