Starbucks wants uniformity more than they want good flavor. If you roast to just past the first crack, you’ll have a brighter, more acidic coffee, and you’ll taste more notes of blueberry, or chocolate, or whatever. If you keep roasting, you begin to roast out these distinctive notes and your product becomes more uniform. Starbucks will roast past the second crack to get this. Unfortunately, for people who truly love coffee, this flavor profile is more burnt than tasty.
