2 whole eggs and 3/4-1 cup of egg whites has been my go-to most mornings here recently. Have added cottage cheese in the past, as was suggested above, as well. Can't go wrong going either of those routes, egg whites by themselves are just devoid of anything other than protein, really

I've never heard of adding cottage cheese to eggs but I'll give it a shot. Are you guys cooking the cottage cheese in with the eggs to cook?
