And what most people don’t know is a lot of the crawfish you see were actually quick frozen last spring when crawfish were cheap. They usually ship those to other states and countries but that’s mostly what your are seeing in restaurants here now,

How do those hold up flavor and texture wise? I eat flash frozen shrimp and those are fine. Same with crab.
