My daughter was in a Walmart two nights ago and they had no check out registers at all open because none of the cashiers showed up to work.
It was self-check-out only with some long arse lines. I've never stolen or skipped scanning items, but that would probably have had me pissed off enough to do it just to get back at them.

The alternative is not opening the store at all and leaving you empty handed or over paying at another store… if any of them are open!
