Never heard of that but I will check it out. If it is anything like North Alabama chicken and rice it has to be good.

Just looked up that Jimlaya stuff and it has tomatoes and celery and all kinds of stuff in it. Not that there is anything wrong with that but this ain’t that.

This is actually pretty easy to make just take a heaping chunk of duck fat and throw it in a pot with some diced onions, bell peppers, a little salt and ground cayenne pepper and brown that stuff really good. Throw in some Alabama smoked sausage (have also heard of some people using Spanish chorizo) and continue cooking for about 10 more minutes scraping the bottom of the pot occasionally. Then throw in some cubed up chicken thighs until browned really good. Add some Riceland rice and stir around until golden brown and add the turkey bone broth and cover for about 30 minutes. Toss in some sliced green onions and serve up. It’s kind of a regional thing that started in the Hazel Green area back in the very late 1990’s but is pretty good.
