I like to cook cauliflower/cauli rice in a little chicken broth until it's real soft, then hit it with an immersion blender. Add a touch of cream/ half & half, and it's a much lower calorie/carb chowder base. Shrimp & corn, chicken & spinach, or any other creamy soup you want.

You might be surprised how creamy it comes out without the addition of cream

That being said I do put some finely grated parm in my blended cauliflower soups
