I got some ground lamb and eggplant with the intent of making this but I've never made it before

It's one of my favorite dishes and unfortunately the restaurants here don't have it for whatever reason so I figured I'd give it a try this evening.

Something like this. I like to char the eggplant over charcoal. Adds a layer of flavor.

No idea how to make it but Aristos at Poseidon's Greek Restaurant in Lafayette has the best I've ever tasted.

BTW I decided to make it last night and it came out great

I didn't grill off enough eggplant for the top coverage but overall I was happy with the outcome

I will use a different brand of tomatoes next time. That's the only issue I had with the dish. I was in a pinch at a local meat market and just grabbed what they had. Next time I'm going to use some good San Marzanos

Michael Simon recipe that is excellent! I pan fried the eggplant for 3 mins a side instead of grilling and also substituted feta for pecorino in the bechamel.
