We did this years ago, cut our bill for TV in half (went from Cox to Hulu+Live).
The biggest change for us was getting used to browsing channels by channel name rather than channel number (the GUI is much more user friendly now than it was then).
The slow, steady cost-creep is annoying, but it's still better than Cox.
The only real issue we've had was with the Roku device we use (because of something with the specific model of Samsung TV we have, the Hulu app for it won't do _+Live). Roku devices are shite for heat dispersion (or, were at the time) so everything except for their top item (Roku Ultra) would eventually overheat even though there was plenty of circulating air around it.
