I've never eaten goose and after reading this thread, I never will. Every single recipe posted sounds fricking foul.

Grilled over charcoal sounds foul? Specklebelly goose is not like a canada or snow. It tastes great. Of course you can do more with it, but you certainly don't need to.

You could seriously cook specks and wood ducks like you do a ribeye and it will be fricken good.

Specks are good but it's still a goose. Don't bother with snows and blues. I only eat 3 ducks, teal, wood duck, and muscovy. They can keep those big ducks.
