Marinate with honey, soy, ginger, garlic overnight or at least three hours.
Grill like steaks. Rest 20 minutes then slice and salt/pepper. Service with mashed potatoes and make a brown sauce by adding red wine, a stick of butter and pepper jelly to a pan with the leftover marinade. I use a whole jar of pepper jelly.

We did a teriyaki marinade for the goose. And left in the fridge overt. While the goose was cooking on the grill, we heated the sauce.
Sliced thinly and then poured the sauce over the bird. It was delicious.
