I just did it and I used like 2.5 lbs if chicken and a little under 2lbs of sausage. It was a lot of meat especially sausage but I won’t complain about that. Flavor was great for a c and s gumbo. I didn’t add anything other than j seasoned my chicken a bit before browning. It was a little greasy but probably partly my fault.
