Depends on the piece.
Legs and wings, obviously eat everything at once.
Thighs and breasts, somewhat separately. Pull the skin, take a bite or 2, then put it to the side for later use. Next, pull the meat and eat inferior parts first. Then replace the leftover skin on the best pieces of meat and commence salivary destruction.

This almost exactly, but I will also stick some of it on my biscuit or roll. If there are taters and gravy, some will be dipped as well.
