Amen to this. I use SW pro classic (water based) for my trim and cabinets and 2 coats does the job. That second coat is my favorite to apply and makes all the difference.

Even doing walls with SW emerald I use 2 coats minimum. Even if the paint can cover well the roller may not apply perfectly uniform. Always 2 coats.
