My wife had had the shot and had no symptoms. Her sister did too with no side effects.

I don't do vaccines for flu, shingles, pneumonia, Covid etc.

One of the potential side effects of many of the above is the chance to contract GBS and I'd not wish that on anyone.

My understanding is the risk of getting GBS from the flu, pneumonia or COVID are equal to or greater than the odds of getting it from a vaccine.

Guillain-Barre syndrome can affect all age groups, but your risk increases as you age. It's also slightly more common in males than females.
