Because the pressure cooker is Aluminum and I'm not comfortable with long term use of AL cookware. OTOH, I've had this cooker for fifty years and I know its foibles. It's only blown one time and that was with Great Northern Beans.
I can start the rest of the meal in the Le Creuset as the Beans are getting ready. (I do buy Camellia red beans in 25 pound sacks they are that important to us.)
