There’s plenty enough people and road traffic to put them in Abilene, Odessa/Midland, Lubbock, Amarillo, El Paso. Even one around Fort Stockton or Van Horn.

A Bucees or this Texan place would kill it on I-10 west of El Paso as you cross into the state from New Mexico. You could even have a sign saying next Bucees 500 miles.
