1 day driving from Sedona and back is not much for the GC OP. If you are just staying on the rim you really only need 1 full day, but it’s a 3 hour drive so you are starting off behind. I’d strongly consider a night in the park. The GC is basically in the middle of nowhere so prepare for that. Something like a 1.5 days is probably great for the GC.
I agree with the above the eastern entrance road is great and very quiet.
I’m not sure if they rent E-bikes at the park? That would be a great way to see the park if so.
I was there with my 3 kids under 10, horrible place to take kids, but that won’t be a concern if yours’.

Go to William's Arizona and ride the train to the GC. Also look into an annual national parks pass. It will save you $$. Route 66 attractions in Amarillo and west to Flagstaff are pretty cool. Midway Cafe if you can.Winslow Arizona display of standing in the corner Eagles Take it Easy song tribute is cool and right off of I40
