Holy wall of text
You had a lot of good advice from a brief scan of it. Except I don’t agree with this:
quote:
A large modified vee jon boat (1860 or so) and a 40HP tiller will do anything a bay or skiff boat will do with the exception of going offshore
No, just no it won’t. A huge stretch there. I own a bay boat but I also recommend a cc aluminum to the op.

I think I'm in love with your wife.
No offense.

Not replying to you necessarily but to the few that gave other options. 3 people is a must, I can’t have a boat my wife can’t ride in. So that rules out a boat too small and a kayak. I’m honestly open to anything that will achieve my initial needs. I do plan on this being mainly for my son and I, but my wife will want to cruise and the dog! Haha

$25K new boat
Is this actually a thing?

And the tow vehicle is also...a day on the water is not cheap even in a small jon boat with a tiller outboard.
I towed a 1436 for a decade with an Oldsmobile Alero. Small boats don't need big trucks. That's one of the main reasons I still don't own a big boat.

I vote CC 18'-20' aluminum for you. Great fishability in all areas and comfortable for the wife to cruise in a few times a year. One with jump seats would be ideal. Budget becomes the issue. You'll need to find one used.

Not saying this boat exactly but something like this I think would check off the most boxes for you. 20 ft size. Good power. Will cruise nice and get shallow.
LINK
The 20 ft aluminum center console has to be one of the most popular boats in south Louisiana for good reason. Additionally since such a boat is so popular they will be the easiest to shop for on the used market.

I’ve had 3 cc and a few dual console. Fishing a cc is easier, but to me a dual console is safer. I was in the ponchartrain with my 8 yo when a summer squall kicked up. Literally bungee corded him to the leaning post because he kept flying off when we hit white caps.

Check your estimated tax bill before you buy. I just got mine on my new one and it was more than the damn insurance which was out of sight high on it's own. I could have titled it at my second home and saved 90% taxwise.

I have a 2020 Express XP 200 with a Yamaha 115 I'm looking to sell. It has a minn kota trolling motor, Lowranance depth, gps, fish finder and most of all your requirements. Not sure about the ability to add a poling plat form. I'm only asking $27500. Id you are interested, I would be glad to send you some pics. [/img]

Baw stop being a poor and get him a boat
If you want to be cheap, 18' alumaweld with a 90 yammy. You can fish 3 easy from ot. Drafts shallow too.

This would be the boat to get. Lots of room, shallow draft. You wouldnt need to upgrade unless you start getting mad at the trout and want to chase them on windy days.
I have a poling skiff, and it was my only boat for 6-7 years. I've done almost everything in it, weather pending, but the room for a family is severely lacking. A big wide higher sided boat would be perfect.
I would say get a 18-20 ft bay boat, but if you want to chase shallow water reds like you do in the kayak, a bay boat wont cut it. Those wide aluminum boats draft less than my skiff.
As far as the poling platform, just stick an ice chest on the front and back. Poling is cool and all, but I rarely actually pole, its not that easy. I t-motor 90% of the time.

Always think about this. Boats really get "small" when you put them in the water. It looks big on the trailer if you know what I mean. If your trying to decide between 18 or 20 feet, or 20 or 22 feet, go longer if you can. You want regret it and the note won't be that much different.

Look for an early-mid 2000's Hewes Redfisher 16 or 18 with a 2 stroke yamaha. A lot of boat for the money. You wont get super skinny but can handle chop great.

Whatever size you think you need, get one size bigger
I have never regretted having a boat, though I may have regretted keeping one too long.

Whatever style boat you land on, get as large of one as you can afford.
Boats get small quick.
