Yes. Neither Webb nor Hubble take color images.

Webb actually collects infrared, or near infrared wavelengths. Technically it observes from long-wavelength visible light (red) through mid-infrared.

Hubble observes near ultraviolet, visible, and near infrared.

For each telescope, scientists take multiple images using filters to only allow a specific wavelength in at a time. They then assign a visible color to each wavelength and composite the images into one falsecolor image.

They’ve also admitted to using photoshop to enhance the images.
