Update: I bought Novolin insulin this morning at CVS without a current prescription. My blood sugar levels are still over 350 mg/dl but I am at work and climbing stairs and drinking water.

You should be eating as close to zero carbs as possible until you get your insulin refilled. Even after that you should still remain relatively low carb
