Restaurante Candé is a great dinner spot with an awesome atmosphere. Also check out Ana Restaurant Bar.
Grab drinks at Cafe del Mar right before sun goes down. Great people watching
Check out the Old City area but be prepared to be harassed by people selling junk.
If you have time, take a boat out to Baru Island for a fun time.

Walk around the old town and explore. Reminds me of NO before NO became a shithole

Solid advice.
OP- I live in Colombia and go to Cartagena often.
There are INSANE restaurants there. My favorite is La Cevichería
The beaches SUCK but they go from shite to pretty good if you get out to an island. tons of tour groups to choose from.

San Felipe de Barajas fort (reminded me of St. Augustine, FL).
Church at la Popa.
Walk around downtown, they have pretty cool museums.
Lots of colonial parks, hotels and buildings, it's worth the trip.
