I've got your exact same truck with the same level, I have 275/65/r20, which comes out to just under 35" tire diameter. Perfect size for the setup in my opinion. I've got the BFGs on mine.
ETA: for the level/lift, go with swapping out for the Bilstein adjustable shocks, way better than just adding the spacer on top.
