That smothered pork chop technique would work fine. You might be surprised at how long you have to cook it before it gets tender enough though!
Some of the best squirrels I’ve ever eaten, my grandmother fried. She would pressure cook them first, then dust in seasoned flour and deep fry. OMG! I wish I could sit at that kitchen table again.

Squirrel makes some of the best gravy there is. Deer gravy is a close second, especially when the deer is smothered in the gravy with onions.
