Good Lawd that pork chop is incredible. A group of friends went to Cafe Sydnie Mae last month for a b-day dinner. The pork chop was tender, juicy, and could be cut with a spoon. I asked the owner how was it made ? Brined for 24 hours and then sous vide for 12 hours. Arguably the best pork chop I've ever had. It was better than my wife's wagyu flat iron steak. Killer ambience and the live smooth jazz music was perfect
