It originated as a peasant food in Europe in the Middle Ages, and only “scrap” parts including the head (minus the eyes, brains and ears), tongue, feet and even skin of the animal were used.

So similar to chitterlings and how slaves got the part of the pig they didn't use.

This was years ago, but one time I ran into this black dude I went to school with. He introduced me to his cousin who was with him. She was from Washington or somewhere and it was her first time down here and I asked her how she liked it and she was like "its okay. everyone talks funny and the food is different". We were just talking about the food, just general conversation and she said they cooked something called "chitterlings" (she pronounced it chit-er-lings) and that the smell was so bad she had to go outside and went pick up something to eat because she couldn't stomach the smell..

I was thinking to myself "what the frick is chit er lings". Then because she said they smelled bad I said "what you say chit er lings do you me chitlins?" and she was like "yeah, but it has the word chit er lings on the bucket".

I asked her if anyone told her what they were and she sad no. I told her it was hog intestines. Her cousin was talking to the person with me and she stopped and asked him if chit er lings were really hog intestines and he told her yes. She looked at me and said "I can't wait to go back home" and just stopped talking...
