You can cook everything you would on a gas or charcoal grill. In terms of convenience/ease of use, I think gas is superior but pellet is a very close 2nd, charcoal is a distant 3rd. In terms of taste, pellet and charcoal are superior, hard to pick between them, but gas is a distant 3rd. Pellet is probably the best overall option - fairly convenient/easy, excellent taste.
Personally, I still cook mainly on gas. I have charcoal, but I only use it maybe 2-3 times per year. Very close to pulling the trigger on a pellet. Following for recommendations on a budget friendly (but quality) pellet grill.
ETA: My opinion on pellet is from cooking on a Traeger as a wingman a few times. Not my setup, not my show, just kinda helped while we drank beers and watched football.

Only drawback to pellets is you can't just leave them in the shoot when it gets stupid humid. The pellets can swell and they are a PITA to unclog. Other than that I love the ease of use of my Pellet smoker. I just have to remember to empty the pellets after using it.

I have a camp chef XXL and am very happy with it. Only goes up to 350 so I can't grill on it so I still have a Weber kettle. They're very easy to use and if you want more smoke flavor you can use a smoke tube. As far as emptying the hopper, I leave mine full and keep my smoker on by back porch with a cover over it. Never had a problem with the pellets getting wet.
