I had a student job working at the stadium. The field is raised in the middle for this very purpose. Back then the tarp only ran down the center of the field from goal line to goal line.

Yes, the playing field used to have a very pronounced "crown" to it to promote drainage. But I heard that with the new playing surface and a drainage system beneath the sod, the field no longer has that crown to it.
Quarterbacks used to have to compensate for that crown. Throws to the sidelines would be too high if the QBs didn't allow for the different elevation.
I'm not sure when LSU went to the flatter playing surface.
