The bread.
Imagine eating Gumbo in Philadelphia...it's probably not gonna be as good as one from New Iberia.
The quality also varies in the region. Last time I was up there I ordered a Cheese Steak and it came with sesame seeds...and it ruined it for me.

nothing, trust me. I've been to all the famous spots in Philly. None of them topped Philly Me Up or South of Philly down here.
Cheesesteaks are just meh in general. They look way better than they actually taste
