I used to have that problem also.
What I did was cut about 5” off of a yardstick and put it over the top smoke hole, then cover with the ceramic egg cover. Open the bottom vent just a little and store it. Haven’t had mold issue since.
You have to heat the egg pretty hot to kill that mold, though.

I've had it happen. Just build a fire and burn it off, scrape the grates too. Not that big of a problem.
