Was just there in august. Did barcelona, Madrid, last 100km of the Camino from Sarria to Santiago, then Lisbon. Barcelona was incredible, a day trip to Monserrat was fun too. Madrid personally was fun but I would skip it. Lisbon was amazing too, so many places to walk around and eat, a day trip to Sintra and cassias is a must too.
In short I would do Lisbon and Barcelona for sure. The Camino was incredible also, but a whole different vibe than the cities.
Also as a side note: food in Barcelona and Madrid is super cheap (like 10 euros for more food than you can eat plus a couple drinks and no tipping). Lisbon food prices were more like what you see in the US.
