I think we all do.
You start with the music you loved in your prime. 17-25 or so. You listen to that for a while. Then switch to stuff from childhood.
Seattle music for me gave way to 70’s music. The new stuff I like sounds like older music.

In my case I didn't switch, per se. I still listen to the stuff I dug in my formative years. However, my tastes broadened to include things like funk, soul, blues, even some country. That said, my bread and butter is still prog rock, fusion and Steely Dan.
