For wild birds you are going to need a larger shot than 7.5 for pheasants and chucker. The size of the shot will be determined partly by the type of hunting you will be doing. Hunting behind pointing dogs can be done with a slightly larger shot than push and block hunting.
I would suspect 5 or 6 shot will handle your needs.

Guys I've been doing this trip for more than 10 years. I appreciate the constructive criticism on what size I need shot to use. But we have it figured out. Thanks.
The Pheasant and Grouse are wild the chucker where brought in 20+ years ago and pen raised but now have a sustainable population in the area. Wild but not Wild Wild as they do feed them with stations around the farm. LOTS OF WALKING fence rows and cross cut fields. 6-10 miles a day usually.
