They've done studies with vultures consuming significantly more sodium nitrite than what it takes to kill a pig with no lethal effects.

Vultures are feeding on dead hogs that have consumed the poison. Thus not directly exposed. The dead hogs are still safe for human consumption by the way.
This idea of selective poisoning came from Australia. The bird deaths have been studied there. The birds consume the poison directly thus killing them.
