The bike trails around downtown Bentonville are beginner and some at Hobbs State park.

I'd recommend floating one day (ordered least trashy people to most):
Kings River
Illinois River
Elk (only float during the week).

The Buffalo is a fairly long drive if staying in Bentonville/Rogers.

The Momentary is another museum near downtown Bentonville
