Pretty much all major sporting events are now card only. Airplanes as well.

Not sure how its legal, probably in fine print on your ticket agreement

Can you pay for a major brand hotel room in cash?

Yes you can, but you have to let them swipe the card for incidentals.

Guy I knew was cheating on his wife. He had a system where he would pay for the room in cash, but he had to swipe his card. It doesn't get billed unless you run up additional charges. Guy stepped out for about an hour to deal with something and was unaware that his paramour got a drink out of the mini-bar. Wife ends up opening the bill for the $12. He was busted.

Because a taco stand isn't a creditor.

You aren't attempting to pay off a debt, which is the only protection legal currency gives you.

They are perfectly able to refuse services if you cannot provide payment in format they prefer.
