the restaurant pays 10/hr
you work 10 hours
you make $50 in tips
restaurant pays $50 to make up the difference
if you make $100 or more in tips,
restaurant pays NOTHING
they do not pay minimum wage, they only cover the distance between it and tips

You are economically illiterate. I don’t know who told you this, but this isn’t even close to true for non-waiter jobs. It’s also not completely accurate for waitstaff jobs.
