Red October by a mile. Tom Clancy knows naval warfare and it shows (read Red Storm Rising for even better submarine warfare). Great sub story. Crimson Tide merely took place on a sub.

CT has the more intense character battle between Hackman and Denzel and seeing those two go at it is gold every time. The sub stuff was just a vehicle to deliver it. I found the concept of the movie interesting personally.
