At this point, with so many places WILLING to ignore it all, I’m quickly losing patience with the few that still want to carry on with this mindset.

It has always been about their liquor license or conditional licenses. They lose that then they lose it all.

How much would you be willing to risk when the courts keep siding with the powers that be.

It's become obvious to me which ones have some sort of weird control bent, and which ones are just trying to keep their head down.

The former, I'm starting to stay away from, the latter, especially if I enjoy doing business with them, I give them the benefit of the doubt still.
