Hot fire.

Rub with a little EVOO , then, cracked pepper and salt.

Sear hot on all four sides.

Move off hot heat and roast until you hit around 127. Rest a few minutes.

Don’t tell family or guests that it’s ready. Eat it yourself.

Order pizza for the others.
