What if you can sell the same amount of king cakes at 20% higher price?

Work smarter, not harder.

Price isn't what matters. Profit is what matters. And really, marginal profit is what matters.

Because they are selling out at the price they are at now. And can still sell more at that price. So their price needs to increase another 20% if they are selling out at an already higher price.
