There's definitely a way to do Disney as an adult right.
Dressing up to pretend everything is "magical" while waiting in line to spend your paycheck on a popcorn bucket is definitely not one of those ways.

I enjoyed drinking around Epcot during food and wine festival.
I can’t fathom waiting 6 hours for anything though, no matter what the ride or event is.

No kidding. Wife and I went for a week a few years ago. Rode rides and had fun but did tons of higher end dining and such. Disney offers a ton of that and we had a great time.
What we did not do is take pics with characters, stand in line for popcorn buckets, go to character-themed meals, and other stuff that is reserved for children.
