I don't know what my "hardest" class was. Maybe Advanced Anatomy and Physiology or a graduate level stat class
Most interesting was either advanced writing or another one of my English classes. I can't think of the name of the other one. In advanced writing, we just sat in a circle and debated different political topics. The other class I'm thinking of was some literature class.
None of those classes directly relate to my major (Health Information Management and Healthcare Informatics).

The higher level English courses are fantastic. Criticism was hands down my favorite, and most challenging. Probably where I got indoctrinated the most with my previous left leaning views that I have since shook off
But everyone chiming in and kinda creating a complete understanding of various texts is awesome. I ended up buddying up with a classmate and we wrote all of our papers in her apartment where we could bounce ideas off each other. We'd sip beer and talk about Faulkner until like 3AM on the regular.
