Instant sell out season tickets if Fisher is hired at 7M. That will pay for itself very quickly.
I think OP is missing the point that schools look at these deals as investments. You have to weigh the ROI.

NFL coach contracts are fully guaranteed. Coach can't leave for another NFL team without the team agreeing to it and being compensated. No penalty for going to college really. An owner could hold a coach to a contract in that situation but in practice they don't.

Very true. I think though if a coach left and scooped up all the talent there would be big drama. However it's no different than if Saban left Alabama kids are still going to either want to play for him.
