Potato salad recipe

I usually boil my potatoes in crab boil….

My mother made the creamiest, best potato salad, it was always the first to go. Her secret was to take the egg yolks out of the hard boileds and cream them separately with some mayo. It makes a big difference.

Golden potatoes 4 lbs
Homegrown eggs 8
Ranch Dressing 1/2 cup
Blue Plate Mayo 1 cup
Frenches Mustard 4-5 tbls
Use tator masher and leave a few chunks. I even leave small amount skins.

B&J Seafood in Hammond has the best potato salad I've ever tasted. No one there will give me the recipe!

Thank you. Too many otherwise decent tater salads are ruined by disgusting sweet pickle relish. It tastes bad, and it’s a sign of why we have so many diabetics and people who grocery shop on mobility scooters. They luv dat sugar.

I make it a little different!
Potatoes cut up to 1/2 to 5/8 thickness
Miracle Whip
Boiled egg and then use a grader to cut up.
Finely chopped yellow onion and maybe some green onions.
Finely chopped celery
Sweet pickle relish [without the juice]
Salt, Pepper, Tony's and garlic
Paprika
Sugar
I cook the potatoes until soft, but not mushy. Drain and allow to cool. I like a fair amount of celery, but add some sugar to offset the celery bitterness. I don't like the mustard flavor in potato salad.
I mix up everything except the potatoes until well mixed. I then sample to see if more seasoning is needed. Then I add the potatoes and mix some more. Add more Miracle Whip if needed. I then refrigerate until cooled before serving. I like to add Paprika to my serving bowl.

My family is so divided on this that any time there is a dinner involving potato salad there will be one bowl made with dill pickle and one bowl made with sweet relish. Both clearly labeled.
I’m team sweet relish. Dill appears to always be the less popular option of the two.

Close to mine, but I use a lot of green onions rather than onion. I also use celery. I like the added crunch.
If you're ever passing through Boyce, hop off 49 and hit Uncle Albert's for great fried chicken and potato salad. Before the former owner retired, she told me she uses some sandwich spread in the potato salad along with the usual ingredients. I keep forgetting to try that. Her niece bought the business and runs it now.
