Mine's similar to the OP's, except I omit the boiled eggs and add finely chopped celery. The pickles I use are homemade sweet pickles, the ones made with lime....

I think McComb's Catfish One is the best catfish in this part of the state. Edited to add that it's on Hwy. 51, just north of Walmart, in a metal building with a porch attached. It's almost in Dollar General's parking lot....

Here are two that we enjoy as breaks from our usual chicken.
One Pot Cabbage Casserole
2 pounds ground beef (or 1 pound each of beef and country sausage)
