that is correct.
i actually take the egg yolks and add about 2 tablespoons of olive oil and a splash of vinegar first, and keep stirring that up until it turns smooth. Then i add the mayo. And i season the mayo mixture with a good bit of cajun seasoning. Its the way my maw maw did it, and my mom, and now me, and anyone who's eaten maw maws potato salad loves it.

Depends what the potato salad is being eaten with. Gumbo potato salad is very plain, BBQ or picnic potato salad should be doctored up.

I do, too. It seems like quite a few of the people on this board seem to be afraid of crunch in their salads, though. I tried Calvin's chicken salad one time, expecting something sublime after all the rave reviews on here, but found it was more akin to chicken paste.

But, but, but, I put celery in my potato salad! That has to count for something!

I don't like chunky chicken salad. I process mine a bit also.

my mom does a unique version of potato salads that goes great with bbq!

make your potato mash as you normally would, then add mayo and vinegar to your liking. you want it to be creamy and vinegary...not too dissimilar from coleslaw.

also add a chopped onion, bell peppers and green onions for crunch.

I really like Donald Link's recipe.

Ingredients
2-1/2 pounds of Yukon Gold, Red or Russet potatoes
1/2 cup of finely minced onion
1 large stalk of celery, chopped
1 green onion, sliced
1/2 tablespoon of dried parsley
3/4 to 1 cup of mayonnaise
1 tablespoon of spicy Creole style mustard
1 teaspoon of kosher salt
10 turns of the pepper grinder
Paprika to garnish, optional
Instructions

Peel and cut potatoes to a small dice. Boil until tender and crumbly, about 20 minutes. Drain and set aside to cool. Place into serving bowl and use a masher to partially mash them, leaving some chunks.

Add the onion, celery, green onion and parsley to the potatoes; toss. In a separate small bowl, mix together the 3/4 cup of mayonnaise, mustard, salt, and pepper; spoon over the potatoes. Toss again until all the potatoes are coated, adding additional mayonnaise to reached desired consistency. Taste and adjust seasonings as desired. Sprinkle top lightly with paprika, if desired.

I also usually add outside of the recipe the chopped homemade pickles. It really does round everything out very nicely.

I do not want crunch in my potato salad at all. No onions of any kind. No celery. Not in chicken or tuna salad either.

That does help a bit, but still...

For chicken salad, I've begun using my mom's old-fashioned meat grinder and run the chicken, celery, and pickles through it.

My hometown in North Mississippi had a restaurant that served that kind of potato salad, with the addition of a bit of mustard. It was so tasty.

Old time. Boiled red potatoes, celery, sweet gherkin pickles, boiled eggs, mayo and a small amount of mustard.

No onions for last 20 years or so, but before that it included onions.

Always make a lot, because I have been guilty of going to the fridge at 11:30 pm for a before bed bowl. The most we ever made used 30 pounds of potatoes for a Sunday school dinner party, made at the request of the class.

Boil 5 lbs peeled cubes potatoes in seasoned water

Boil 12 eggs

Drain potatoes when fork tender, peel eggs and separate yolk from whites. Chop/crumble whites and add to potatoes. Mash yolks with a fork and add yellow mustard. Combine yolk mixture to potatoes and whites and mash with potato masher adding mayo till desired result.

Taste every now and then till you like it

yeah idk where she got it from, but she's been doing it since I was a kid.

I know it's not for everyone, but it really is good with bbq.

Any other time (for instance gumbo), we do something similar to the other recipes mentioned here (eggs, mayo, mustard, pickles)

I like sweet pickle relish in my potato salad but the wife does not. Potato salad is one of those things were preferences vary wildly. I also like mine more like a creamy mash vs chunks.
