I tried to find a net posting of the Brining FAQ, but it seems it is not up as a webpage anymore. I came across this AFB compendium that contains the Brining FAQ By Mikey Lulejian. IMVHO it is a bit disconnected, but it is worth reviewing in detail.

For me, you can't go wrong w/ The Fat Man's Brine for 3 days (refrigerated of course), and bbq'd to 165°F at center of breast.

Try Bailey's in LaPlace as well. It is just down the street from Jacob's. Stock up from both stores and decide for yourself which froducts from which store you prefer. Andouille, Tasso, Smoked-Hot Sausage, and Hoghead are musts from both IMVHO.

Can't help w/ the NOLA.

Tried SN N.Hemisphere and SN Estate Ale. I liked both very much.

The N. Hemisphere had hops crawling out of the bottle when the cap is popped off and out of the glass with every sip.

The Estate Ale is another wet hop beer, but it is more in-balance (for me). There is plenty of hop flavor, aroma, and bitterness, but when you drink it the malt and caramel are right there too. This is one I would like to drink year-round.


As for stores I saw something about Storeon BA, so I made a rip out there. Beer selection is great. Large Wine and Liquor selection as well. Picked up the above beers and some Pannepot2010.

I have not bought multiple cases from these folks, but they have good prices and offer discounts for qty.

I'm gonna preface my response w/; "Opinions are like A@@holes. Everyone has one and they all smell a little." I think your exploration should start w/ baby steps. Being used to Bud Light means your definition of a beer is one that has little/no body, little/no malt taste, little/no hop bitterness, little/no hop flavor, and little/no hop aroma. For a first step I am thinking Samuel Smith's Nut Brown Ale or Heineken from a can (again, Heineken can not bottle).

You can tell you are ready to venture further when you switch back to Bud Light you get a laugh from the old joke "What does sex in a canoe and American Beer have in common?" Now is the time to try Sierra Nevada Pale Ale, Samuel Adams Boston Lager, and Ommegang Hennepin.

Where from here......ask the person pouring the beer or the one managing the beer section at the store.

OP, I need a few more specifics to help you answer your question. From personal experience and several pits the better you know what you want and why you want it, the better a choice you will make. A good start follows.

Price Range?
Cold smoking or Hot smoking?
Just BBQ or BBQ and Grill
Charcoal/wood or gas/wood chips?
Whole log?
Set/Forget or more tending/better Q?
#People cooking for?
Trailer mounted or backyard?

Also, pls let me know if you would like info on additional reading or newsgroups.

I was in Whole Foods and they had at least 6 cases of the Doubledog on display outside of the cooler.

I hadn't either and thx for the heads up, tetu. Grabbed a 4pak of the Hennepin, some 3Philosophers, and 2 bottles of Life and Limb. (They keep the L&L in the back and you have to ask for it.) They also had some Ommegang Abbey in 750ml btls.

All of the Ommegangs are in the cooler.
I looked and didn't notice them until the fella working there pointed them out. iirc they are on middle shelf half-way down the craft brews
Went by Matherne's on Highland and bought some beer. Just to list out, They have

Ommegang
Abbey, 750ml, 4Pak 12oz
BPA, 750ml
Aphrodite, 750ml
Witte, 4Pak 12oz

Abita
25th Anniv. Doubledog, 22oz

I asked about Three Philosophers and Gnommegang. I was told there is no word on other Ommegang brews at Matherne's, but the hope was more to follow in a couple of weeks if the present inventory sells well.

The 2 stores (Bluebonnet and Highland) have somewhat different selections. IMO the Highland store has a slighttly larger selection. La Chouffe comes to mind.
