re: Shrimp prices...

Posted by cdelau5 on 11/5/13 at 9:03 pm to
Increased demand in domestic shrimp due to a decrease in foreign supply. Below average season is also aiding the inflated prices, especially at such a crucial time in the year with holidays around the corner.
Pappa, I'm glad your party enjoyed everything. Thank you for the compliment and hope to see you guys again soon!

Crabs, especially Males, bury themselves in cold months when water temperatures decrease. What may seem like good ambient weather this time of the year doesn't necessarily mean water temps are good enough for crabs to emerge. A majority of fishermen have pulled their traps out due to lack of supply. Those that do continue to crab are seeing a reduction in their catch by 80-90% which also explains high prices.

re: Can you freeze raw oysters?

Best method of freezing is to take them out of the container and freeze in a ziploc bag. Make sure you take as much air out as you can and add just a tad bit of water.

Yes, took that picture on October 27. As fast as your nets drop you were pulling them right back up. You could literally see them jumping out the water.

The crabs were boiled in unseasoned water and before I could take them home they got boxed up and shipped out

Set the stingray back in the water, it came awfully close to getting me though! Caught some baby flounder & a shrimp in the dredge too.

BLUE CRAB & PEPPERJACK DIP

¼ lb. chopped green pepper
¼ lb. chopped red pepper
¼ lb. chopped onion
¼ lb. chopped celery
¼ cup butter
2 oz. white wine
½ cup half & half
½ cup milk
8 oz. cream cheese
8 oz. pepper jack cheese
1 oz. lemon juice
2 oz. mayonnaise
¼ tsp. cayenne pepper
1 tsp. creole seasoning
1 lb. Bayou Blues™ claw crabmeat

In a medium pot, sauté the vegetables with butter approximately 10-15 minutes. Add wine, half & half, milk, lemon, & seasoning—bring to a light boil. Immediately add cream cheese, stir until dissolved. Then add pepper jack and mayonnaise, and crabmeat. Mix well and let simmer for 15 minutes occasionally stirring

This is a recipe I give out when doing cooking demonstrations for customers. You'll love it. Serve hot with tortilla chips, or chilled with club crackers. It's great either way.
More than welcome to put your storm debris in my dumpster.
I called the DOTD for our district this morning, no answer but I left a message regarding that light.
